Game trailers are supposed to show us what we’re getting, but over the years, they’ve become something else entirely. Highly polished cinematics, scripted sequences, and “gameplay” that doesn’t reflect the final product—why has this become the norm?

I don't remember specifically but I watched a video where the creator makes a fake gameplay trailer for a fake game. Guess what?
People were ready to buy it and even willing for a pre-order. You can see how aware the community is and why we see debacles every now and then

Okay wait, I know what you mean but basically trailer is a supposed to be a short glimpse of the game. If you are being shown what the game will contain I think it will spoil the game itself. Don't you think?

Controversial Opinion: People will watch a fake trailer without any compaints, if its from one of the big AAA studios.

It’s simple. They want to sell a movie then don’t buy the game. They show the minimal gameplay don’t buy that either. They hide all the lazy development behind what they front to you. You have the money. The power. If they want it they are going to bring quality back if you show this isn’t worth your cash. Stop buying in masses. Let them know why. They will change but only then.

You should also understand that most of this is "Marketing" just as you said. AC: Shadows is the best example of this, people just sensed it going down a lot before the team even expected.
The Day Before should be case studies more to know how such a thing slipped under from everybody's radar (quite interesting)
Its just how things work nowadays, gameplay trailers don't show gameplay, movies show different things in trailer and movies. All this happens ehen marketing takes over creativity.
