And deer has no custom ambient, damage and death sound. And you have to keep beta functions? Or keep beta vibe but add and upgrade functions? For example water logging to stairs and slabs, and add beds and seats in all 16 colors? Is Planks in all 16. Why beds and seats must be only red?
Why music in nether is only under other name but music is the same what from overworld. You can make new music for the nether? This is weird. Please!

This feels like Minecraft from a parallel universe
I may be overly pessimistic, but many people might not like this update. You've added a lot of content while maintaining the desolation of the nether, but some people simply hate the new content and can't imagine changing what they're used to. I love your approach, but sooner or later you'll catch up with Minecraft's modern spirit and will lose your own beta feel.
